Two chicken breasts will serve two to three people
2 boneless skinless chicken breasts
1/2 cup sliced fennel
1/4 cup diced celery
1/2 medium onion
1 frying pan that can go from stovetop to oven
1 TBLSP. oil
1 TBLSP. butter
Brown chicken in melted butter and oil on medium heat. Â When you have turned the chicken to the second side make space on one side of the pan to add vegetables. Â Continue to brown chicken and vegetables.
Add Sauce
SAUCE:
1/2 cup applesauce
1 TBLSP. maple syrup
1/4 cup homemade salad dressing
1 tsp. poultry spice
1 tsp. oregano
1/4 tsp. salt and pepper to taste
Once sauce has been added, cover with lid and place in 350 oven for 30 minutes
Serve with garlic smashed potatoes or rice
