Pork Chops

Oh Baby!
These are the best!
Believe me!

This recipe will serve 4 to 6 people depending upon their hunger level. If it’s too much, you have leftovers for tomorrow. Yippee!
I like to buy center loin chops from Costco. Thick and very little fat. Almost no waste.

Sauce:

Now let me tell you, I have just discovered Kirkland roma tomatoes from California and of course sold at Costco. They are amazing. Fantastic and I will be buying them by the case from here on in.
They are diced and the juice they are in is quite thick. As mentioned on my earlier post about my “kitchen essentials” the other brand I like is the AURORA. You can find it at Longos and Superstore and I think No Frills as well. The AURORA brand is a smaller 398 ML can. These also are in a thick juice.
If you are using one of these brands you should use 2 cups. They are diced and thick. If possible try to find one of these because they make a richer sauce.
Add to these tomatoes:
1/2 tsp. worcestershire sauce
4 cloves garlic crushed
1/4 cup white wine vinegar
1/2 cup brown sugar
1/2 cup chicken stock
1/2 tsp. salt
pepper to taste
1 tsp. poultry spice
1/2 tsp. fennel seeds. (A staple in my kitchen)

**If you cannot or do not wish to use either of these and use regular tomatoes be sure they are not STEWED. Just diced tomatoes. Strain them (saving the juice of course for another use) and break them up in your bowl.
Use just one cup! These tomatoes will make a much more liquid sauce and you will have too much juice if you use more than one cup.
Add to these tomatoes:
4 cloves of garlic crushed
1/2 tsp. worcestershire sauce
1/4 cup white wine vinegar
1/2 tsp. salt
pepper to taste
1 tsp. poultry spice
1/2 tsp. fennel seeds
(With this type of tomato you will omit the chicken stock)

Mix sauce ingredients in a bowl.

Season your meat

Heat your frying pan (if you have a cast iron pan, use it)
You want it hot.
Add 1 TBLSP canola oil and then
Lay your chops (you know what I mean) in the hot pan and brown the first side. If you feel like the meat is burning reduce heat but keep it as hot as possible.
Flip meat and while it is browning on the second side
add
1 sliced onion

add 1/2 cup water and stir
add 1/2 cup water and stir

add your sauce and stir a bit more

When the meat is browned on both sides and the onions are lightly sauteed, remove everything to a baking dish.
Pour sauce over the top
One chop for nano and me to share and four to the freezer

At this point you can either bake in the oven
or freeze it for a few days until you are ready to use it.

Bake covered in 350 oven for 1 1/2 hours

Mix 1 TBLSP. corn starch in 2 TBLSP. water. Dissolve

Remove meat from the oven and stir half of mixture into sauce. It will thicken right away. You don’t want it too thick. Just a bit thicker than runny (Yep, that’s what I said. You are smart. You can figure it out)
Cover again and put back in oven for 10 minutes.
When your vegetables are cooked and you are ready to serve, take meat out of oven.
