Whole Wheat Fettuccini

four servings

start with a large(4 liter) pot 2/3 full of water
bring to boil
add 1 tsp. salt
add approx. 375 g whole wheat fettucini (I often break it in half to make it more manageable)

stir to separate
reduce heat to medium so water is gently boiling and continue to cook until pasta is el dente
if you are not quite ready to eat you can turn water off and let it sit for five minutes.

drain in colander. DO NOT RINSE.
put in bowl and toss with 1 to 2 TBLSP. olive oil and pepper
sprinkle with fresh grated parmesan cheese
