Tomato sauce/soup

 

Well, I did it again.  Threw a few things in a pot and decided along the way, what it would be at the end.

Call me adventurous, call me creative.  Well I just say, ‘I had some food in the fridge and when I put them together this is the end result.’

Let’s call this one

Pasta Sauce meets vegetarian meets tomato soup

See what your family thinks of it.

Four cups canned or home frozen tomatoes  (If using canned, use two 28 0z)

1 1/2 cup  chicken stock

1/2 sweet potato

1 cup turnip

1/2 cooking onion

2 garlic cloves smashed

*Optional:  1/4 fennel bulb, sliced

2 TBLSP. cooking oil  (grapeseed, sunflower, olive)

1 (or more)cup spinach leaves

1 cup basil leaves

1 tsp. salt

pepper to taste

METHOD:

dice root vegetables into 1/2 inch pieces and lay on baking sheet.  *(set garlic aside until later)

sprinkle vegetables with cooking oil, 1/2 tsp. salt and pepper.  toss!

place  in 350 oven and bake for 20 minutes.  Remove from oven, stir, add smashed garlic and continue baking for 10 minutes.

while vegetables are baking:

in saucepan: heat tomatoes, remaining 1/2 tsp. salt, chicken stock and spinach on low

When vegetables are cooked through and beginning to caramelize

remove from oven and add to tomato mixture

**You can also put roasted vegetables in a bowl or ziploc bag and place in the fridge.  This will be just fine if you want to make the recipe a day or two later.

heat through and add  basil leaves

Now this is where you get to decide the use for this tomato mixture.

You can either :

1.  leave it as is and spoon over your favourite pasta

2.  leave it as is and serve in a bowl, beside a grilled cheese, crackers or even a piece of toast.

3.  Puree in your food processor or blender and then spoon over your favourite pasta.

4.  Once you have pureed it return it to saucepan and add 1 cup milk, stir to heat and serve as soup.

An easy lunch or dinner option.  You can also add leftover chicken at the end, or brown some ground beef and add to it.

Tonight, I pureed it and added a touch of milk, heated it until steaming and ate it with some fresh, toasted, crusty rolls.
