Tomato, Basil,Feta and PEACH Salad

Serves 8 OR use it to serve 4 and use the leftovers tomorrow or the next day, in

6 cups tomatoes.   I often use compari or something similar and then cut them in half or quarters, depending on their size.  They need to be ripe and cut them into approximately 1 1/2 inch pieces.  The large beefsteak or hot house are not the best because they are too juicy.

1 cup fresh basil leaves cut or torn in half

2 cups GREEK feta cut into 1/2 inch cubes

four ripe peaches, skin removed, cut into 1 inch pieces

(To remove skin, place peaches in large bowl and cover with boiling water.  Let them sit in the water for three minutes and remove with a slotted spoon.  the skin should come off very easily.)

add all ingredients to a large bowl

DRESSING:

1/4 cup balsamic vinegar

1/2 cup olive oil

1/2 tsp. salt and pepper to taste

Toss carefully with salad ingredients and serve immediately

Store leftovers in fridge in bowl with tight fitting lid.
