Doesn’t get much easier or delicious than this
1 Avacado
1 large ripe field tomato
1 ripe peach
Dice each of these vegetables into 1 inch cubes
pinch of salt and pepper
You can serve this dish just like this or you can mix up a dressing of
1 TBLSP. Balsamic (plain or fig)
1 TBLSP. olive oil
1 tsp. maple syrup
toss gently together and spoon into serving bowl
Serve with garlic toast, fresh bread, crackers or whatever you like but make it something healthy. It would be a shame to ruin this very healthy lunch with something unhealthy.
