you will need:
For four servings
1 pound sirloin, or round steak cut into 2×3 inch pieces
1 medium onion sliced
1/2 cup celery greens
2 large cloves garlic crushed and chopped
1 cup Mushrooms halved (if you like mushrooms)
1 can cream of mushroom soup
1 cup water
3 TBLSP. sunflower oil
salt and pepper to taste (I use about 1/2 teaspoon of salt and 1 tsp. pepper to 1 pound of meat)
Heat pan to medium high
add 1 TBLSP. oil and brown meat that has been seasoned with salt and pepper.
The meat will stick a bit which is what you want. It will take about 5 minutes to brown first side
turn meat over and brown second side
REMEMBER do NOT crowd pan. Do it in two batches if necessary, adding a second TBLSP. oil for second batch.
Remove meat from pan to casserole dish
(or if you prefer, you can do the rest of the cooking in your crockpot. For those who are looking for a dish that can be made ahead , this is a great option. You can do the browning process the night before and in the morning before leaving for work or whatever else you find on your schedule, put everything into your crockpot and turn to medium heat. let it cook for 6 to 8 hours and it will be delicious and tender by dinner time)
reduce heat to medium add 1 TBLSP. oil and cook onion and celery for 5 minutes
If you are adding mushrooms, cook them for three minutes before adding onion and celery
add garlic
saute for three minutes
and put vegetables on top of meat in casserole dish
reduce heat to low and
Add 1/2 cup water and loosen brown bits of goodness stuck to pan
Stir in 1 can of mushroom soup and half cup water (Put water in can and get all soup from can and pour into pan)
Stir to blend
pour over meat
cook in 350 oven for 1 hour uncovered check and if liquid is decreasing add 1/4 cup water
cover and cook for another hour (If using crockpot method, place everything in crockpot after everything is browned and gravy made and it is ready to cook, instead of putting it into a casserole)
Serve with mashed potatoes, carrots and beans (or some other green vegetable)
