2(ish) pounds of ribs to serve 4 people
cut into 5 inch pieces
Rub:
1 tsp. fennel seeds ground
I like to grind it in a mortar and pestal but you can also use use pre ground fennel
1 tsp.mustard powder
1 tsp. kosher salt
1 tsp. ginger
1 TBLSP. chili powder
1/2 tsp. curry
one medium onion diced
four garlic cloves chopped fine
Boil water in large 4 litre stock pot
add 1 TBLSP. kosher salt
place ribs in pot and bring back to boil
Boil for 20 minutes
Remove ribs from water and place flat in cake pan or cookie sheet
sprinkle meaty side of ribs with rub
place ribs in crock pot and set it to the highest temperature
add diced onions
chopped garlic
Bake on high for three hours
Sauce:
1 cup pureed tomatoes
1 tsp. chili garlic sauce
1 tsp. cumin
1/4 tsp. cayenne powder
1/2 tsp. pepper
pour sauce over the ribs making sure each rib is covered with sauce
Turn heat to medium
continue cooking for another three hours
Delicious and these ribs will fall off the bones
