2 TBLSP oil
1 large onion chopped fine
1/2 cup chopped celery
3 cloves of garlic
2 pounds ground lean ground beef
1/2 tsp. salt
1 TBLSP. fennel seeds
1/2 tsp. pepper
1 TBLSP. oregano
2 796 ml cans diced tomatoes
2 398 ml cans tomato sauce
2 cups chicken stock Either homemade or from the soup aisle.
1 cup fresh basil leaves
Saute onions and celery (please use the leaves) on medium heat until it begins to soften. Add garlic and saute for 5 minutes or until it begins to soften
remove from pan
turn heat to high and add meat. Brown
Return vegetables to saucepan and add spices
stir
Add tomatoes and chicken stock. Stir and reduce heat to medium low.
add basil
cook at a slow simmer for 1 to 2 hours
Use what you like for dinner and when it has cooled divide the rest into containers. Freeze and use with two months.
