Peach and Blueberry Crumble

This makes 6 sensible servings!

5 ripe peaches **peeled and sliced into 8

2 cups blueberries

1/2 cup granulated sugar

zest and juice from one lemon

2 TBLSP. Flour

1 pinch salt

Mix above ingredients together well but gently in a large bowl

spoon into 8 cup or 2 litre casserole dish that has been coated in butter or cooking spray (Canola)

TOPPING:  In bowl mix the following three ingredients together  into medium crumbs.  (Hands work best for this part)

1 cup flour

3/4 cup brown sugar

1/2 cup butter at room temperature

1/2 tsp. cinnamon

Sprinkle over peach and blueberry mixture

Bake in 350 oven for 30 to 40 minutes or until topping is golden and peaches are soft

Serve with ice cream, whipping cream or just plain

This is very delicious and easy

 

**Place peaches in large bowl and cover with boiling water

allow to sit for 5  minutes and lift out, one at a time with slotted spoon.  If they are too hot to handle run for a couple of seconds under cold water.  Peel should fall off quite easily.  Slice!
