You won’t believe how easy this is
You will need:
two pieces of chicken breast, bone in, skin on.
1/2 tsp. garlic powder
1/2 tsp. kosher salt
1 tsp. sage or poultry spice
1 tsp. basil
1/2 tsp. curry pwdr.
Loosen and sprinkle dry ingredients under skin. sprinkle remaining dry ingredients on top of skin
lay skin side up in baking dish. Cover bottom of baking dish with 3/4 cup chicken stock.
Cover pan with foil and bake for 1 1 /2 hours.
Remove from the oven and take all of the meat off the bones. Shred it or take it off in pieces and place it back in the juice it was just baked in. Cover it until you are ready to serve.
This will serve at least three people.
Mini Roasted Potatoes (oven Fried)
5 per person
cut in half length wise
place in single layer in pan and drizzle with 2 TBLSP. olive oil salt and pepper to taste. Toss so all pieces are covered in oil.
I often chop a couple of TBLSP. of fresh dill and sprinkle on the potatoes when they come out of the oven.
Bake for at least 1 hour or until a fork pierces easily and potatoes are getting golden.
Don’t worry about over baking. As long as you don’t let them burn, they can be as crispy as you like them.
