Chicken tenders marinara (sort of)

Serves two hungry people or four not so hungry people
1 TBLSP. butter
1 pound chicken tenders
salt and pepper to taste
1 tsp. basil
1/2 tsp. oregano

1/4 cup apple cider vinegar
1 398 ml can AURORA diced tomatoes
juice of half a lemon
1/4 cup diced onion
1/2 cup diced celery
1 clove garlic minced
1 cup frozen corn

melt butter on medium heat

add chicken to pan and turn heat so chicken is sizzling but the butter is not burning
Add salt and pepper and herbs
continue cooking, turning once chicken is brown on first side
brown second side and remove from pan
with heat on medium
If you are feeling like some plain little chicken tenders, (great for children)you can serve them at this point. Serve with carrot sticks, celery, peppers or whatever you like
or you can put these little tenders on a bun and they make a delicious sandwich. Outstanding!!

add to pan 1 TBLSP olive oil and onion and celery

saute until beginning to soften. 8 to 10 minutes

add garlic and continue to cook for 5 minutes. Do not burn

reduce heat to low
add vinegar, lemon and tomatoes and corn
return meat to pan

stir carefully, cover and allow to simmer for 15 minutes

Serve with whole wheat fettuccine, rice or even mashed potatoes
