You can use boneless skinless breasts but you can also use skinless with the bone still attached. They are less expensive and easy to remove the meat.
I bought two packages each having two pieces of breast
This amount of chicken will easily serve four.
Remove as much of the meat as possible from the bones. You will have one large piece of chicken and one smaller, from each bone.

Grate 1 cup cheddar and set aside
Place chicken bones in pot and add water to barely cover. peel and cut in half, one medium onion. place in pot. Cover with lid. Bring to a boil and reduce heat to simmer. Continue to cook while you prepare chicken.
place 1 cup milk in a cereal bowl
On a dinner plate or pie plate
mix together:
1 cup bread crumbs, 1 TBLSP garlic powder, 1 tsp. salt, 1/2 tsp. ground pepper, 1 TBLSP, basil, 1/2 tsp. cumin 1/2 tsp. curry
put chicken in milk and then coat it with dry mixture.
***TIP Since the chicken only takes half an hour, make sure you time the cooking of your vegetables so that nothing is getting cold before the other part of the meal is ready. You want to serve the chicken within 10 minutes of it coming out of the oven. When it is ready you can cover it with foil if your vegetables are not quite ready.
Spread 2 TBLSP. cooking oil (I use sunflower) on a cookie sheet evenly. Lay breaded chicken on cookie sheet. Bake in preheated 375 degree oven for 30 to 35 minutes, turning after 15 minutes. If you would like it to be a bit more browned just leave it in for another few minutes. Don’t leave it too long though, or it will dry out.
When you have the chicken in the oven and have turned it over at the halfway point, make the sauce. Remove bones from pot. You should have approximately 1 cup of liquid. Half fill a small jar with 1/3 cup water. Add 2 TBLSP. flour and shake (put the lid on first) well until smooth. Add to this mixture, 1/2 tsp. salt and pepper. You can also add 1/2 tsp. basil. With chicken broth on simmer, pour flour mixture into pot while stirring with whisk. Mix well as it thickens. Add grated cheddar. stir until smooth.
when you are ready to eat, spoon 1/4 cup sauce onto dinner plates,
add a pile of potatoes, carrots, corn (or whichever vegetables you have decided upon for this meal. Place chicken on plate. Add a few pickles or some cole slaw . (I tend to like coleslaw with a “gravy meal”) Have I given you my cole slaw recipe? If not, stay tuned. This is one yummy and very easy meal. Start to finish it takes about an hour.
