Blueberry peach Muffins

3/4 cup melted butter

1 cup white sugar

1 cup buttermilk

2 eggs

2 tsp. baking soda

2 3/4 cups flour

1 tsp. baking powder

1/2 tsp. salt

1 cup blueberries

1 cup finely diced peaches or nectarines  (If using peaches, remove skin first.  This is very easily done by placing peaches in a bowl and pouring fully boiling water over the top to cover.  Leave them for 1 minute and the skin will peel off easily.)

put melted butter and sugar in mixing bowl

in a separate bowl blend buttermilk, eggs and soda

add milk mixture to butter mixture and peaches and give a little stir

add flour that has been tossed with baking powder and salt

stir quickly and fully

add blueberries.  Either frozen or fresh.  My very favourite are wild because they are small but I often use regular ones.

Spoon into greased muffin tins to 2/3 full and top with topping

TOPPING:

Mix the following together and sprinkle lightly on top of muffin batter

1/2 cup brown sugar

2 TBLSP. soft butter

Bake in 375 oven for approximately 20 minutes or until tops are golden and they are no longer mushy.
