Our Littlest little one came to town. She requested Salmon for dinner and with pleasure I obliged. My very favorite way to eat fish, is fried. That may have something to do with my Eastern Canadian roots. (My dad was from Newfoundland) Easterners speak of ‘fish fries’, with a look that says, pleasure. Roasting, baking and steaming is of course healthier but fresh fish freshly fried, pleasure indeed.
Most often though, I bake my salmon. I have never quite gotten the hang of a ‘fry’ so I stick to what works for me.
Easy, quick and delicious.
*1 large salmon filet. 2 inches per person will be enough but you can add a few more inches ‘just in case’.
½ tsp. salt
pepper to taste
2 TBLSP. fresh dill
½ lemon
1 piece of foil
1 piece of parchment
both long enough to meet at the top of the salmon and be folded over the long way.
Lay foil on counter
Lay parchment on top
Lay salmon on top
Add seasoning and lemon as listed
Fold parchment over and seal
Fold foil over and seal
Bake in preheated 350 oven for 30 minutes
Carefully open package and test with knife or fork.
If it is undercooked a little, fold package up and leave in oven for another 5 minutes. Take it out and let stand on counter for 5 minutes and serve.
If it is quite undercooked for your liking leave the package open and put it back in oven for another 10 minutes.
Be careful. Fish is better undercooked than overcooked.
I like to take it out of the foil but leave it in the parchment and put it on a platter if I am placing it on a buffet table. If I am serving it I cut it into pieces and put it on the plates.
PAM’S TIP:
Have everything else ready before you slice and add to dinner plates. It will cool off very quickly. Leave it packaged up until everyone is at the table.
*I usually purchase my salmon at either Costco or Longos but better still, a fresh fish market is ideal.
