I have two cakes that are staples for me at the moment. Here and now I will tell you about my
Blueberry Lemon Coffee Cake. Honey, it is so good!

Have two large lemons on hand
TOPPING:
1/2 cup butter
1/4 cup medium rolled oats
1/2 cup brown sugar
1/4 cup flour
mix together with your hands until this mixture is course crumbs
add 1/2 cup sliced almonds and toss carefully so the almonds don’t get crushed
set mixture aside
CAKE:
1/2 cup soft butter
3/4 cup granulated sugar
1 cup plain greek yogurt
zest and juice from one large lemon
pinch of salt
2 eggs
1 tsp. baking powder
1/2 tsp. baking soda
1 1/2 cups fresh or frozen wild blueberries
2 1/2 cups flour
1/2 cup milk
2 TBLSP. corn meal
GLAZE:
juice of half a lemon
1 cup icing sugar
mix together and it should be runny. If it isn’t, add more juice
Grease EITHER a 9×13 baking pan OR 9 inch spring form pan
METHOD:
In a medium mixing bowl,
stir flour and baking powder
In a stand mixer beat soft butter and sugar together until creamed together. You may need to stop every few seconds and scrape the side of your bowl.
add eggs. MIX
add yogurt,salt,lemon juice and zest and baking soda. MIX
add half of flour mixture and turn the mixer on for a couple of seconds. Add half of the milk and turn mixer on again.
add the rest of the flour and then the rest of the milk.
Just mix it briefly to blend but do not overmix
Remove bowl from mixer and stir in berries
put batter into cake pan that has been greased and then sprinkled with corn meal
Spread crumbs generously and evenly on top of cake
Bake for approximately 45 minutes or until cake tester comes out clean but not dry
If using a spring form pan bake for approximately 60 minutes or until cake tester comes out clean but not dry
Allow the cake to cool for five minutes and then, with a toothpick or cake tester, poke holes all over the top of the cake.
pour runny glaze evenly over the cake.
Let it sit for a half hour and serve. You can serve it for brunch or coffee time or dessert or whenever you want.
It is perfect on it’s own or with a dollop of whipped cream.
