As far back as I can remember, when people gather for ‘coffee’ during the day, they usually eat a muffin, or perhaps a piece of coffee cake. It was most likely close to thirty years ago when I was attending a ladies Bible study that met in Barb Smith’s home, when I first had a “Big Batch Bran Muffin”. Incidentally, our dear friend Brenda Mackay was our teacher and she was a good one. I loved sitting under her tutelage and always left, richer when I left. She doesn’t live in this World anymore. Maybe she and Nano are spending time together. I don’t know, but what I do know is that she is with Jesus now and she left an impact on lots of us still walking around on Earth. I’m pretty sure it was at the very beginning of the ’90s when my children were still small but finally fully occupied during the day, with school. (yahoo) As we did back then, I asked Barb for the recipe and wrote it out, to put into my recipe box. At the moment I cannot for the life of me find that little recipe card, but the other day I wanted to make some of those delicious muffins. The batter lasts for six weeks in the fridge, so when you are very fond of Fresh out of the Oven baked goods, this is the perfect recipe. I often divide it and give some to someone else, but whether you keep it all for yourself, or share it with others, it’s one to make! Thank you Barb, for opening your home to a young mom so many years ago and for sharing freshly made treats. At this time of Covid-19 I am hoping the times of gathering together, will soon return.
