Let’s talk Garlic

Garlic is an important addition to so many dishes. When you use it in it’s raw form it is strong and leaves an after taste and not only that. As you enjoy the memory of the meal you just ate, you may find yourself lonely when people move to the chair across the room.
I limit my use of raw garlic to salad dressing.
When preparing a dish that will taste so much better with a bit of garlic, it is important to remember to add it near the end of the saute process and on medium heat. Garlic burns easily and can taste bitter if this happens.
I use garlic often. In stews, chicken, beef, marinades and of course pasta dishes.

One of my favorite ways to prepare garlic is to roast it.
Slice the pointed end off to leave the cloves open on one end.
Place on a piece of foil and drizzle with 1 tsp. olive oil and a pinch of salt.
Fold the foil up and twist

Bake in oven along with whatever you are cooking, for 1 hour
Allow it to cool for a few minutes and then squeeze garlic onto a saucer. From there you can add it to whatever you wish.

For dinner tonight I cooked “herb roasted chicken” and roasted vegetables, along with boiled carrots and boiled mini potatoes.

I grew up eating boiled potatoes. Nothing fancy but they were always delicious. One philosophy my mother held to was that vegetables should be well cooked. Not cooked until mushy mind you, but cooked so that they were easily “forked” and “chewed”.

I will venture out (way out) on a limb to say if you don’t like to eat vegetables it’s because you haven’t had GOOD vegetable.
If you want them raw then eat them raw
But if you want them cooked, cook them.
Not to oblivion
But so they are easy to chew and the natural sugars are evident.

Coconut Cream Pie

Today I made Coconut Cream Pie.
As I look at the clock it appears that I made it yesterday in fact. The hands on the clock seem to spin faster once the clock strikes bed time. I should be there but am still here.
I have a lot to say which is nothing unusual but I do want to share that amazing Coconut Cream pie recipe. You will love it!
As Nano and I were enjoying it tonight we decided it really isn’t that bad for you (!!)

Cinnamon Buns are the best

I made cinnamon buns today.
They are very good.
So good that Nano and I each ate two when they came out of the oven. I mean right out of the oven. They were hot and gooey and so delicious we couldn’t help ourselves. Well We could have helped ourselves, by using some self control, but we didn’t want to, so we just plain helped ourselves, to two cinnamon buns! Each!

For years I have tried and tried and tried to make good ‘dough’. My dough is not bad. I mean, I have had worse, but it just wasn’t up to the standard I aspire to. So frustrating to go to all that work and yeast and flour and warm (but not too hot) water to dissolve the yeast. Mixing and kneading and punching and rising. Pinching and forming and rising!
Then one day the lights went on. You see, a family tradition and one never to be considered unimportant is that of fresh cinnamon buns on Christmas morning. The little ones might make alternate arrangements if they thought there would be no cinnamon buns on Christmas morning.
I used to buy those little frozen dough balls and do the balls and bundt pan thing and have fresh buns after a night of rising. They were good and everyone thought they were the cat’s meow.
But one year, as I mentioned, the lights went on and I took myself to the local grocery store and to the bakery counter. I asked the nice baker if I could maybe purchase some of of his already mixed and kneaded and punched and pinched and risen dough, for a price and take it home and make my own buns.
Would you believe he said YES?
Yes he did!

I felt it was necessary to inform you of this twist in the cinnamon bun production because this recipe you are about to read does not include the dough making part.
If you want to make your own dough and have a recipe you want to try, go for it!
If you have a bread maker which I don’t, you are leaps and bounds ahead of the game and the rest will be a breeze.

But for me and I was bold enough to bring already produced dough to my sisters kitchen and show it to our mother, this morning, I am going to leave the dough making in the hands (as it were) of the professionals and from there I will create the delicacy that I love so dearly.
