Get your crock pot out. Plug it in. Turn it to 8 hours.
It will take 5 minutes to get this guy ready before you leave for work or hop in the car to take your kids to school.
This will make 6 servings
One two(ish) pound roast. Either “blade” or “round” You can usually get one or the other on sale at a grocery store in your town. The blade roast will be tied with string which should stay on for cooking but taken off before pulling apart once it’s cooked.
4 garlic cloves smashed
2 Bay leaves
Place above items in crock pot, seasoning meat with salt and pepper
In separate bowl mix together:
1/4 cup red wine
1/2 cup (one small can) V8 juice
(if you want it a bit spicier add some Chili Garlic Sauce)
1 TBLSP. soya sauce is also optional
pour sauce over meat
pop the lid on and off you go.
It will be well cooked by the time the 8 hours is up. If you want it to cook faster, set the pot to 6 hours. This roast will of course be well cooked. But that’s what you need for “fall apart” options.
When it is cooked, remove meat from crock pot and set aside on baking sheet
pour juice out of pot into measuring cup.
The grease will come to the top. Carefully pour fat off or you can spoon it off.
with two forks, separate meat from fat.
Put meat in a dish or on a plate and cover with foil while you complete the meal.
Put juice in a saucepan on the stove so you can thicken it.
To thicken, I will tell you how we do it. Feel free to do it your own way. I have friends who have trouble making gravy using my method but here it is.
to a small jar add 1/4 cup water
add 2 TBLSP. flour
put lid on the jar (tightly!!!!) and give it a shake. If the mixture is too thick add another TBLSP. of water. It should be liquid enough to pour nicely but should not be super thin and watery.
Pour gradually into juice and stir with a whisk on medium heat until it thickens. This thickening part should be done just before you want to serve it.
If you have cooked vegetables, you can add the meat to the plates and top with the gravy.
If you are going the hot beef sandwich route, toast your bread, (thicker slices are good for this)
top with beef, pour gravy over everything and serve.
This is good with some tomato, fresh raw vegetables, cole slaw (my favorite, recipe coming in the days ahead), dill pickles, really whatever you like.
IMPORTANT!!
Put the hot beef sandwiches together when everyone is at the table or have everybody do their own. Once the gravy goes on, they need to be eaten.
Great for dinner or even lunch.
You can also use the beef on fresh buns. For lunch they are fantastic.
