Raspberry Lemon Delight

I was going to call this a Semifreddo but then I looked up the definition of a semifreddo and lo and behold, apparently it is made with eggs.   Well, this dessert has not a single egg on the list of ingredients so I decided to keep it simple and call it

RASPBERRY LEMON DELIGHT

I know!  It’s a bit cheesy but it’s a nod to the moms and grand-moms who would have approved of this delight in years gone by.

It is made in layers and each layer needs approximately two hours to freeze before the next layer is added.  I of course, usually decide on my recipes as I am making them, which does not work well if it takes a day to make the dessert!  However, I actually started to create the dishes on the menu for this event the day before, which worked out perfectly.

Yes, it has three layers and requires some prep, but it is an easy dessert to make so give it a try.  Your people will love it, believe me.

One recipe for LEMON CURD
1 pint (500 ml) of fresh raspberries
500 ML carton of whipping cream
1/2 cup plain Greek yogurt
1/2 cup cream cheese at room temperature
1/2 cup plus 2 TBLSP. white sugar

line a large loaf pan with two pieces of plastic wrap. one lengthways and one sideways. Leaving six inches hanging over the edges. Set aside!

Make a batch of LEMON CURD and set aside to cool

FIRST LAYER:
in electric mixer
mix cream cheese and yogurt
1/2 cup sugar
until well blended
add 1/2 cup raspberries and give a quick mix just to break the berries up
spoon mixture into loaf pan and set it in the freezer. Allow it to set for two hours.

SECOND LAYER:
spoon onto first layer, approximately 3/4 cup lemon curd and put pan back into freezer for two hours.

THIRD LAYER:
place one cup whipping cream in mixer and whip
when it is beginning to thicken add 2 TBLSP. sugar
fold cream into remaining curd
mix in 1 cup raspberries
add this layer to the top of the lemon curd in the loaf pan

fold plastic wrap to completely cover dessert and freeze until ready to use. This dessert can be made and kept frozen for two or three days ahead of when you want to serve it.

Remove from the freezer thirty minutes before you want to serve it. Take plastic off and slice into 1/2 inch slices. This will yield at least ten slices
