You will need:
1 cup butter at room temperature
1 cup brown sugar
1/2 cup white sugar
1 tsp. vanilla
2 eggs
1 tsp. baking soda
1/2 tsp. baking pwdr
1/2 tsp. salt
2 1/4 cups flour
1/2 cup dried currants (Bulk Barn)
1 cup semi sweet (always semi or bitter sweet) chocolate chips
1/2 cup chopped almonds (I buy whole raw almonds, toast them for a few minutes and give them a rough chop)
mix butter and sugar until slightly creamy and well blended. add eggs, vanilla and give a short mix. Add dry ingredients and give a quick mix. Add last ingredients. Mix until blended and drop onto parchment lined cookie sheets.
Bake 10 minutes or until just turning golden.
Do not over bake!
soft and chewy!
The currants and almonds give them a bit of texture and the chocolate, well chocolate is just obvious.
